The carving method described is one of two ways most folks carve a turkey. The other method is essentially the same, except that the breast is carved parallel to the breat bone in thin slices after making a perpendicular cut through to the breast bone just above the wing joint. In any case, be sure to not overcook the turkey; dry breast meat is not very tasty.
